Já faz um tempinho que não postamos nada do nosso livro da
Ladurée. Bom, era um sonho culinário fazer esse tuille de amêndoas. A primeira fez
que comemos foi no restaurante A Figueira Rubaiyat e achamos chique d+!!!
É muito fino servir
esse tuille no café como fazem !!
Aí claro que
fizemos!

| Mistura |
80g de farinha
250g de açúcar de confeiteiro
1 ovo
5 claras
1 colher de chá de vanilla
100g de manteiga
250g de amêndoas lascadas
Bata as claras em neve,
adicione o açúcar de confeiteiro, o ovo, farinha e a manteiga. Misture
bem.
Por último acrescente as amêndoas e encorpore bem bem
devagarinho para no quebrar as amêndoas.

A grande dificuldade vem agora: coloque uma quantidade
muito pequena na forma com silpat (não sabe o que é Silpat? Clique aqui) untado na manteiga e
com a ajuda de uma colher deixe a massa redonda. A massa deve ser quase
transparente. Quanto mais fininha mais crocante vai ficar a Tuille.
Coloque no forno pré-aquecido a 180graus até que fiquem bem dourados. Eles ficam até queimadinhos e douradinhos.
Tire delicadamente com a ajuda de uma espátula e enrole em um mini rolo de macarrão. Deixe secar e tire delicadamente.
Pronto!!! Biscoitinhos bem chiques e crocantes para o café.
Dica 1: o tuille é muito delicado. Quebra muito fácil.
Dica 2: Caso queria guardar pode ser colocado em um pote hermeticamente fechado. Se deixar ao ao livre ele fica rapidamente mole.
